Easy Peasy Pea Pesto
If you love pea microgreens (and carbs) as much as us this is a really easy and delicious recipe.
Ingredients:
-2 Oz. Speckled pea microgreens
- 1/2 Cup olive oil
- 4 cloves whole garlic
-1/2 cup walnuts. Substitute as desired with pine nuts etc.
-1 teaspoon salt
-1 teaspoon pepper
-juice from one lemon
Directions:
Roughly chop pea greens and add to a blender or food processor with all the other ingredients. Blend until smooth and creamy. That’s it. Now add it to your pasta, sandwiches, pizza or morning eggs.
